In a pot, bring water to a boil, and add 20 almonds to it. Boil for 2 minutes, then let it cool slightly before peeling the almonds. Blend the peeled almonds into a smooth paste and set it aside.

In a saucepan, heat the milk (both almond milk & regular milk or just almond milk) along with saffron strands until it comes to a boil. Simmer the mixture for 25 – 35 minutes or until it thickens.

Once the milk thickens, add the blended almond paste and heat for an additional 2-4 minutes. Add the crushed almonds, pistachios, sugar, cardamom powder, and cinnamon powder. Heat the mixture for two more minutes.

Dissolve 1 teaspoon of rice flour in 2 teaspoons of water and add it to the mixture. This will help in thickening the kulfi. Once the mixture reaches the desired thickness and is not too liquid, switch off the heat and let it cool completely.

Once cooled, blend the mixture once more to achieve a perfect creamy texture. Refrigerate the mixture for an hour to prevent the formation of ice crystals.

Pour the kulfi mixture into individual kulfi moulds or any desired container, cover it, and freeze it. Traditionally, kulfis are served in special moulds designed for setting ice cream. Allow the kulfi to freeze for 6-8 hours or until it sets.

To unmold the kulfi, place the mould under running water for a few seconds. Then, remove the kulfi on a plate, slice it, garnish with pistachios, and serve immediately.
